Job Summary: we are a busy restaurant & bar in Lake Tekapo with stunning lake view. We open for breakfast, lunch,snacks &drinks through to full dinner service & bespoke functions. We are looking for (1chef) to join our team.We guarantee a minimum of 30 hours per week
Chef will be Overall running of the kitchen on a day-to-day basis.
The Employee will undertake the following duties:
•Construct menus with new and/or existing culinary creations ensuring the variety and quality of the servings,
•Control the kitchen staff roster and ensure wages do not exceed 13% of turnover, by operating an efficient kitchen, and staffing in accordance with trade,
•Monitor and maintain food inventory needs, stocking and ordering,
•Estimate costs and ensuring all purchases come within budget, and control the food cost to maintain/raise the food’s profit margins,
•Control and direct the food preparation process and any other relative activities,
•Manage and work closely with all other chefs of all levels,
•Provide direction, leadership, and instruction to all other chefs of all levels,
•Plan orders of equipment, ingredients according to identified requirements, and arrange for repairs, when necessary,
•Be ultimately responsible for ensuring the kitchen meets all regulations including sanitary and food safety guidelines,
•Ensure correct stock rotation procedures are followed,
•Ensure maintenance problems are promptly reported and followed up on,
•Approve and “polish” each dish for quality, quantity, presentation and correct temperature before leaves kitchen,
•Assist in interviewing and hiring staff,
•Ensure all kitchen staff operate in full compliance with the Food Control Plan,
•Ensure all new kitchen staff are immediately trained for compliance with the Food Control Plan,
•Foster a climate of cooperation and respect among staff in the kitchen,
•Help with dishes, general cleaning and maintenance of kitchen area and equipment when necessary.
SKILLS, EXPERIENCE & EDUCATION
A positive and enthusiastic manner. Excellent skills in cookery techniques and ability to execute them under pressure. Ability to delegate effectively.
